Ingredients
  • 1 1/2cups cookedcracked freekeh
  • 2cups low sodium rinsedchick peas
  • 2cups prepared rinsededamame
  • 1 cup dicedred pepper
  • 1 cup choppedscallions
  • 2cloves mincedgarlic
  • 1/2cup choppedparsley
  • 1tablespoon sundried tomatopaste
  • 1 lemon zested and juiced
Instructions
  1. Cook freekeh, drain well Chop and dice pepper, scallions, garlic and parsley Zest and juice lemon Squeeze paste into bottom of large bowl, add zest and juice and mix Add rest of ingredients Season with salt, pepper and add olive oil to taste
